Lavender Scone Recipe
Give these fluffy lavender scones a try, the aromatic lavender mixed with the quintessential British scone is a match made in heaven. We make all our scones on the farm to this exact recipe!

Ingredients
350gm Plain Flour
1 Tsp Baking Powder
1/4 Tsp Salt
85gm Butter
75 gm Caster Sugar (you can reduce this according to taste)
175ml Milk
Squeeze of lemon juice
1 Egg, Beaten
1 Tbsp dried lavender
10ml of Lavender Essence
Instructions
Pre-heat the oven to 220C/450F (200C fan), then lightly flour a baking tray.
Sift the flour with the baking powder & salt. Rub the butter with the flour until the mixture resembles breadcrumbs. Stir in the sugar. (I usually do all this in my food processor)
Place the milk in a glass jug and heat in the microwave (high power) for 30 seconds. Add the squeeze of lemon juice and the lavender essence. Don’t worry if it curdles, this is normal, but quickly move onto the next step.
Make a deep well in the flour, pour in the liquid and mix to a soft doughy texture with a flat knife. Sprinkle on the lavender flowers and once combines, gently knead into the dough very lightly until it is just smooth. Roll out the dough on a lightly floured board & cut out scone rounds.
Brush the scones with the beaten egg, and sprinkle a few lavender flowers on top if you wish.
Place the scones on the floured metal baking sheet (do not use greaseproof paper)
Bake in oven for 8 - 10 minutes or until well risen and lightly brown. Remove from the oven and leave to cool. on a wire rack. Serve with strawberry jam and Cornish clotted cream, or butter, lavender honey or lavender-infused cream. Also yummy with home made lemon curd!
Notes
Feel free to add more or less lavender for a more or less flavourful scone!
